Happy Monday! Can you believe that we are almost half way through the year! 2018 thus far has seen a huge emphasis on plant based and vegan diets. Without going on too much of a tangent and jumping on the band wagon, here are some reasons why meat and dairy free meals are so popular. Firstly, many animals and the environment are being helped by not consuming dairy and meat.  Secondly, these meals are delicious, filling and so good for you. You will be in better health and feel less sluggish by not eating meat and dairy. Thirdly, eating this way does not have to be expensive and you can in fact save a great deal of money. These are but to mention a few of the benefits of eating a vegan/plant based diet. As always, no judgement if you still want to eat meat and dairy. But try and incorporate more fruits and vegetables in your diet and having a few days a week where you only eat plant based. I know this can be tricky and so that is why I have found tasty, easy and affordable vegan meal prep recipes that you can make this week.
